Being below the level of the gym leader is not being "underleveled" retard.

Your highest level pokemon should be at least 20% lower than the gym leader's highest level pokemon for it to be a balanced challenge. So for a level 50 opponent you should be level 40. And that's with Set battle mode and no items.

The levels scale with your party rather than ingame. I used less Pokemon than the OP (another factor in why OP is underleveled), so my team's levels were around 18~19, in underground, the Pokemon where anywhere from 15 to 20. I caught a Buneary and Absol and both were on par with Gardenia's ace and the exp from catching them also boosted my team's levels and I was overleveled for a big chunk of gameplay after.

I think the only real way to get a challenge out of BDSP is
1. keep a full team of 6 at all times to spread the exp ultra thin
2. don't touch the underground at all since they didn't balance around people using it
3. use herbs to counteract the friendship bonuses

If you do all these I think you can get a challenge out of the game, don't live like me and actually try using the new features since they turn the game into a joke.

Amie is tied to affection. Even if you deny yourself a feature that's supposed to be a selling point of these remakes to offset it (following Pokemon), you will still get Amie shit just by walking around. You cannot escape it.

this is tied to your pokemons happiness which takes a while to get to high levels so it makes sense you haven't seen it at the second gym

Even if you avoid the underground, you're still going to be hit with the forced amie bonuses, early game the EXP scaling is really bad and late game, while the levels catch up somewhat, now your entire team has a doubled crit rate and tank moves that would kill them, if they didn't just dodge them outright.

If you emulate it though, there are mods to turn off EXP share and affection buffs.

I'm not moving any goalposts, this has ALWAYS been the case. If you fought wild pokemon for exp in previous games you were overleveled and playing a braindead game. If you only fought the trainers, used at least 6 pokemon evenly and didn't use exp share, you were 20% below the bosses in levels like I said.

I have no idea what you're talking about here because doing all this shit the shills are telling me to do to make the game harder isn't hard itself, it's just tedious as fuck and I don't know why you would waste your time doing any of it when you could just use mods to disable Amie and Exp Share.
Alternatively, they could have also made Exp Share and Amie optional, just like they were able to do not even a decade ago.

Most of them haven't played the game and went off the leaked shit where he went through with his overlevelled Infernape with max affection. I got to Roarke and my team was barely close to level 14, and that was with catching every Pokemon until that point and going out of my way to do extra battles, catching a spare Machop for the in-game trade etc.
Ilca actually designed a decent exp all system, it's not broken like the one in the recent GF-developed games

Why the fuck should you be given a team of fucking high leveled pokemon for literally free? If you want a team of 6 and make use of its advantages, you have to deal with being underleveled
At least give every single gym leader 6 pokemon too if they want to attempt to balance the game around fucking expshare for fucks sake.

Team size no longer matters. Modern EXP distribution generates EXP out of literal nothingness instead of splitting the EXP across the party.
This usually means you'll either have a rounded team at or slightly above the curve, or an overleveled favoritism main and five other Pokemon vaguely below the curve.
