I agree with the rest of your premise, but most of the time expiration dates are legit.
Maybe you might be able to consume it a few days later (or a few months if it's frozen or long-lasting), but most of the time it's not worth the risk.

as another anon mentioned, dairy expiration dates are legit, but most of the other shit are fake. chips, cookies, carbonated drinks all have fake expiration dates solely so that they can get you to throw them away and buy more. they use so many fucking conservatives in 80% of supermarket products that these things can be consumed months past expiration and nothing will happen to you

There's a surprising amount of wiggle room on the expiration date on dairy if you properly keep it cold. I want to say something like 4 days for milk.

I've experimented a lot with expiration days, and I feel like 4 days is a stretch, unless you mean you will heat it so that any bacteria are killed before you drink it

Actually if you keep milk refrigerated it won't ever truly go "bad", even chunky and sour milk can still be consumed with no adverse effects but they just taste werid.
