The main games obviously used the same generic sprite for all eggs (except for Manaphy), but Sugimori drew them with patterns based on the Pokemon inside, indicating that that's how eggs were supposed to look canonically.

Then Pokemon Go happens and eggs get retconned to all look the same just with different colored spots.

Yes, but also, what comes out of the egg is supposed to be a surprise unless you're breeding them yourself. So I understand why they did this from a gameplay perspective.
