Potions (Wound Medicine in Japanese) are medicine you spray on their wounds. Revives (Vitality Fragments)/Max Revives (Vitality Clumps) are basically pills that restore their energy. Basically in-universe you either uses a Revive or wait for your Pokemon to recover naturally. Since you can do this in-game by taking a nap in a bed, let's say that it normally takes a Pokemon a few hours to fully recover. The Pokemon Center and Revives merely speed up this process.
