It’s so weird because I’d see them being sold online just a few years ago for around $30 maximum, now they’re upwards of $80. Even weirder is that I got a copy of Diamond at a local game store again, only a few years ago for around $15 and now it’s looking to be the same price online as HGSS.

There's a sizable amount of people that buy both versions every release. It shouldn't surprise you that secondary sellers see how stupid the fans are and adjust prices accordingly.
