GameFreak doesn't believe in staple mechanics anymore. Everything and anything that isn't Pikachu, Charizard, Eevee, Mewtwo and Lucario are expendable and can be permanently axed from the franchise under the guise of keeping the games that featured them "unique and memorable".

They have both flash and substance. Even if soaring can be a little slow, and PWT isn't as difficult as some other things, there's more to both than just that. I feel like if ORAS didn't have soar, it wouldn't let you fly to every route in the game (my evidence is they never fucking did this again). I have my problems with soar (seriously why did I need to be given a Mega Legendary Pokemon) but I don't need to waste a moveslot on fly if I don't feel like it.

Soaring is overrated, once the novelty wears off after the first two times trying it, you'll go back to using Fly like normal because it's much more convenient. It's not even having to manually navigate to your location that's the annoying thing about using soaring, it's the long cutscene of summoning and mega evolving Lati@s that alone takes longer than just using Fly.
