Why do we see literally hundreds of pokemon centers but almost no hospitals? Do humans just walk off their injuries? That seems quite cruel and inhumane.

There are plenty of human hospitals, we just only see them when they're important to the plot.

I remember one of the earlier seasons having an episode that took place in a hospital for humans (the doctor there just ended up operating on pokemon anyway, but still).

Humans in the poke world are less afraid of death and disease since they have confirmed that there is an afterlife: e.g. Silphscope, ghost pokemon, mediums, various human ghost sightings, etc...

We've had normal hospitals show up early in the series and later they retconned it so Pokemon Centers also treat humans.
