It all depends on what mons you use.
For me it was:
Emerald postgame
Platinium whole
B/W starting from middle of the game

Usum without exp share is by far the hardest game.
As for the rest they all too easy.
I would rank the old advance and ds games as mid difficulty.
Swsh, XY, OrAs, LGPE as very easy.
The old gameboy games as easy.

Depends what you mean by fairly. If you use the gifted Pokemons at your disposal, Lucario, Lapras and 2nd starter you won't find much issue.

XY without EXP share, Kalos-only mons, no Megas, no Amie and limiting the Pokemon you catch to team members only does make the game a lot tougher. You do get more underleveled by not using the EXP share/Amie and more significantly by not catching every Pokemon you see. The early-mid to late game is the most brutal because your Pokemon aren't fully evolved, have subpar moves and many of the Pokemon you face are fully evolved. Playing under these conditions is honestly stressful.

Platinum is easy. And bdsp only has cynthia as a challenge but by the time you reach her you wont find any issue if your team has good synergy.
Usum is the only hardest game cause the token battle can be a big hurdle

It depends on teams. My current team had so many issues with Faba and psychic types and well as fairies. Even Cyrus Honchcrow bodied my team somehow. I loved it

Yeah, you're usually a good 3-5 levels under the next boss and 3ish levels under the route trainers. I didn't use any gift mons in my run though.

One think about XY is that it takes quite a while before you get any good TMs, Rock Tomb being your best one for a better part of the game.
