To your point about sexual dimorphism leading to subspecies, hummingbirds could perhaps fit what you’re looking for (to an extent). Different species display different dimorphism (some species have a size difference, others have a beak difference), so ideal mates might be smaller or larger through different species, leading to development of new subspecies and species over time
Again, not quite what you’re looking for but it was something I thought of off the top of my head...I like hummingbirds
