How would you incorporate Ghost typing into this?
I think it'd have to be Ghost/Grass

But then you miss the whole appeal of the mushroom taking over. Bug/Ghost would make more sense for something like a termite that lives on a log that evolves into a grumpy, older termite living on a dead stump.

I wouldn't. I would make a regional where a different kind of heat-resistant spicy fungi that grows around volcanoes has attached to paras, which turns it into a bug/fire type.

What about a evolution where Paras fight back and gains full control, would he retain Bug/Grass or should become a full Bug type or become poison since he's now harvesting the mushroom, but not letting himself getting controled

An evolution where the host body amasses all the souls of Paras who succumbed to the mushrooms in order to fight back. The mushroom bursts open and there's a lot of ghosts that resemble Paras without a mushroom sitting on the back of the main body.
