I play competitively and would like all of Pokken 1's characters to come back aside from maybe shadow mewtwo and libre who could have their rough playstyle transplanted ointo other Pokemon. The existing roster I feel is really good
The obvious fighting game archtype that hasn't been filled yet is a character with long reaching normals and grabs, like Dhalism or Kakyoin. Drapion, Breloom, or Grimmsnarl could be good for that with their stretchy arms/tentacles.

Fighting type pokemon are special and cool because they exist in a context where they just use martial arts when everything else is crazy elemental monsters
If you have nothing BUT fighting types, they lose that appeal, and also because every Pokemon in Pokken has basic punches and kicks too. The average fighting type Pokemon isn't any more unique then the averagre fighting game character skill/ability wise either.
Pokken as is uses either dual typed fighting mons which have other things going for them, OR has primarily/mono fighting mons like machamp and lucario to act as a contrast to the more elemental themed Pokemon in the game, where lucario is your shoto with refined martial arts and hadoukens and machamp is your lariat using grappler.
