Early game dex-grinding is therapeutic in a way that's hard to describe, even if its painfully inefficient as compared to doing it all endgame.
Sorta wish I forced myself to go slow the entire time, but I was getting a bit impatient by the time I was moving through the 4th area and sorta just blew through the story at that point, and now I'm at the post-game grindfest.
Looking for a second pichu (wtf are those dex challenges?) is already giving me ulcers.

What the are you grinding exactly? I got level 10 on most every areas Pokemon and I'm at 23 hours after beating Arcanine. Are you shiny hunting?

Not really. Only rewards from completing them as far as I know. I’ll probably do a few after I finish the story. Probably best to do them before since you get items to help you but I’m enjoying the final parts of the story.

A good number of them give stardust, gold, and other stuff. You should definitely do the minigames ones. An easy way to grind Ra Berries is the Wydeer Balloon minigame.

34 hours in and my team is in the mid 40s. Just got to Icelands. Haven't really explored too much of the Highlands either. I've spent probably 6-8 hours focusing on just the two shinies though.

I'm not doing any of the side quests besides the base camp ones, the menuing is too cumbersome and the rewards don't feel worth it. Am I missing out?

Increase in supplies, recipes, clothing and hair. Especially farming.
Otherwise the other quests can give Evo items. Then there are the others that just add to the identity of the village itself. They're quite easy to do if you naturally go out and catch Pokemon.

Personally I don't like having many task to complete in endgame, so I'll ideally have like half the Dex at least Level 10 before the endgame. I just do say an hour of story for every four hours of side/catching content.
