Because Black & White made the two different versions thing actually work. Pitting your dragon against N's dragon was cool as hell. Plus thematically these games are about dualism, so a third version doesn't really work.

Because it fucked with the Ying and Yang theme of the originals.
The same thing happened with FRLG, they didn't want Blue being remade as it clashed with Red.
