And I did it all before even fighting Volo, so all I had to do after the fight was catch the stuff that's only available after beating him which took an hour max.

I did, was only missing a few at that point. Only thing that took long was Spiritomb. Of course in my rush to quickly evolve everything I ended up making getting the shiny charm way more difficult. Remember to feed your baby Pokemon before catching them, and get the entries for the distortion Pokemon before evolving them!
