It's a legal thing at this point. When game companies make videos of their games they typically use an "in development" version of the game, even if it was already released. This is to protect them from liability in case someone tries to charge them for false advertising when the game doesn't look exactly like what they show.

And even then the final version still looks like utter trash and it was still blatantly the most unfinished and buggiest Pokemon game yet to the point that it was missing shit like the title screen, part of the soundtrack etc. prior to the day 1 patch
This franchise has become an embarassment
