One of the reasons I think its funny that people tout it as a "hard" game as if it isn't just as easy as every other game in the series

They say it's hard b/c of the ultra Necrozma fight, the last totem fight is a step up in difficultly compared to the rest as well.
Other than that its just as baby easy as the rest of the franchise.
The appeal of Ult. S/M is that the story is good and the characters are more fleshed out than S/M not the difficulty.

The NPC battles are also pretty difficult sometimes. Things like the Guzma battles or Hau can be tough if you don't know to prepare for them in advance. Also some other totems like Araquanid and Mimikyu.
