I could definitely see Grass/Ground though, looking at the mushrooms native to Spain a lot of them have a sort of bulbous or flowing appearance and are generally rather plain in their colouration. Could get a sort of sleeping giant mushroom Pokemon that could serve as natural obstacles, alternatively the more wavy appearance could make for a Mushroom Pokemon that camouflages on the edge of the region's desert attacking Pokemon that wander into their territory, disguising themselves amongst the sand and stone due to the layered and wavy appearances from sedimentary build-up.
