I'm worried an evolution will ruin the theme of it.
It's supposed to be a tsuchinoko, and fan evolutions tend to drop that part of it, making sleek or dragonair like.
A proper evolution should keep with the general theme, or at least not look out of place.
Like if you have to make it evolve keep it fat to some extent and add on to the luck aspect of it.
