Rhyperior has better attack, and can actually carry a useful item like life orb, choice band, leftovers, assault vest or weakness policy, giving it more variety of options, and also making it better than rhydon defensively in certain specific aspects.
Rock/Ground is a shitty defensive type but an amazing offensive type, so even if you could argue that there rhyperior isn't better in all aspects defensively, it doesn't really matter because you want strong earthquakes and rock attacks to wallbreak, slightly better bulk is not worth it if you throw away your item, your better attack stat and your ability.
