Sealed appreciates over time because it's a supply that is self destroying. Unlike cards, which can have a stable amount in circulation unless someone tears up a card, boxes dwindle over time as people open them, do rip-n-ships, open on streams, or just open for themselves. So the total amount is always decreasing.
If you're looking for modern booster boxes to hold, any set with alt arts is a good bet. You'll notice myself and a few other anons have mention Evolving Skies already a few times and with good reason. The sets released before and after Evolving Skies are also good bets since they have alt arts. Also take note of fan favourite pokemon like Rainbow Pikachu in Vivid Voltage, or the Rainbow Charizard in Brilliant Stars.
Lastly, if you are going to start buying boxes for the investment potential, be truthful to your cause. Don't buy and flip within a year, or you're a piece of shit and I'll call you one to your face. Buy it and hold it. Also, just buy booster boxes or the most collectible item if it's a "special set." Don't go buying random Vmax boxes with plastic covers and shit, or Pin collection sets that have packs. Just buy Booster Boxes.
