I didn't watch much of the XY anime, what the hell is all the fuss about?

If we're being honest here, XY was very formulaic, but arguably this series was the start of Ash's transformation into a full blown Shounen Protagonist.

ESL Shonenspics were desperate to have the next big thing after DBS went to shit, Naruto wrapped up and Boruto didn't exist yet and One Piece was still being One Piece, so they latched onto the XY anime like a parasite as a result of it taking a notable shift in presentation after BW's criticisms that made them think this kodomo-demographic anime was trying to alienate its audience to seek the shonen demographic.

That's why he looks and acts older in both BW and XY? His age was only reset back to 10 or 11 in SM. In Journeys he's probably 11 or 12.

No one in the anime except for babies age, it's a floating timeline where character growth in that regard is irrelevant so they can tell a never-ending story and revise events as necessary to be better relatable and fitting for the current target audience.
Ash has always been as freshly 10 as he was on the day he was finally old enough to get his first Pokemon and start his journey, and nothing will ever change that.
