Tauros because he supports the Texas Longhorns, and played football in school himself. Longhorns are also associated with Texas and general, and an ornery bull can represent Hank's temper and stubbornness.
Braviary because Hank is all America. He swears to God and Country before anything else.
Munchlax represents Bobby. Rather than choosing Snorlax, Munchlax, being a baby pokemon, is used to also represent Hank's fatherly role-model nature.
Blaziken is a combination of Hank's love for grilling and kicking someone's ass. It also plays into how fired up he can get over simple things.
Mow Rotom is Hank's mower, and his handywork in general. Hank knows everything about yard work, house work, power tools, applicances, his truck, etc.
And finally. Galarian Weezing. Galarian because it present a business style attire, and Propane is Hank's business.
