Hex is probably the single most notable example because nothing of her actual body type is even slightly retained most of the time. At least Cynthia tends to stay slim, even with big boobs.
I'm not against off-model, but I dislike how it completely takes over the portrayals of the character.
At least Hex has the excuse that it was a meme, and that the character wouldn't necessarily have been that popular otherwise anyway Elesa is a nice exception to this, usually gets portrayed fairly close to her on-model design(probably because Skyla already has the tits covered).
