Ability-wise, I think I'd get the most mileage out of Glaceon as I'm not so much a fan of warm weather but Flareon would be a good runner up for the reasons you mentioned. A personally-evolved Sylveon would probably be incredible for mental health if you're ever feeling down or upset or just need a little support. Just imagine after a long day at work, you go out with your Sylveon to a park and enjoy some quiet time on a park bench while it uses its calming powers to help you wind down.
