Why are some pokemon canonically able to evolve faster in the wild
Do the games ever explain this at all?

Doesn't really make any sense
I can have my Pidgey fight the Elite Four the strongest pokemon in the region and it doesn't evolve any sooner but I'm supposed to believe it does from fighting a bunch of little Caterpie and Rattata in the forest?

Levels are an abstraction, they don't actually exist. Pidgey does not really evolve at level 18, that's just what it takes for the player to evolve their pidgey. Take Lance's Dragonites for example, perhaps the reason they evolved "earlier" is because as a Dragon master he is more capable of drawing out his pokemon's power than the player is.

Experience and battle levels are not the same as maturity and age. My headcanon is that a pokemon can be quite longeve and be at a low level and just evolve because of it's age, trained pokemon are actually forced to evolve because of stress they experiment by the hard training they are forced to go through by their trainers

Other thing that I belive is that levels are just a numerical representation of the physical condition of that pokemon so they can actually lost levels if they stop training and battling, like an ancient legendary that has been in a slumber for thousands of years, when it wake up its only level 45 because it is out of shape.

They spawn in that level in the wild because thats what they are programmed to do. Its the Pokemon plus the level to spawn at. The reality you exist in the Pokemon universe is a simulation programmed by Game Freak.

Yes, the evolution method you as a player can use is not the only one in-universe(and gameplay-wise too, thanks to Go).
This is more notorious with trade-evos, even in the original zukan they showed that the trade evos already happened naturally without human interference. Steelix, Escavalier and Accelgor are also explained in their entries as evolving from different reasons and of course you have PLA, Milotic, Magnezone and the like.

Basically, you can trigger evos one way, but that's not the only way it happens in-universe.

In the OS, yes. After that, levels are never referenced in the numerical sense. It just refers to a Pokemon's strength and experience. A Pokemon isn't stronger because it's higher-leveled, it's higher-leveled because it's stronger.

The only reference to "levels" was what "level" Pokemon learn moves at, but that's bullshit because Pokemon learn moves out of order or learn moves that would require a TM or Tutor in the games all the time.

Yes, that's how adapting a video game to a realistic setting works. You have to throw out the shit that doesn't make any sense, but keep the stuff does that make sense. You can't bring up shit like "levels" and "experience points" in a setting where Pokemon are supposed to be organic creatures. You have to pick and choose between what works and what doesn't.
