First of all, diving pretty much turns each route into a 3D map with two floors, so it's not like Dive is a completely trivial interaction that doesn't add anything to the route. And in addition to having various Arceus plates and items to search for underwater, each sea route has at least one thing unique about it:
Route 124 has various diving spots for you to find for shards and other treasures.
Route 125 has Shoal Cave
Route 126 has you diving to find the entrance to Sootopolis, as well as connecting to Secret Islet
Route 127 has the massive underwater chasm, as well as the Eastern half which has more land and houses a few extra trainers and items.
Route 128 has you diving to find the entrance to Seafloor Cavern
Route 129 has a big underwater section and some additional islands added to it in ORAS, as well as giving you access to Secret Shore
Route 130 also has a big underwater section and land added to it, as well as connecting to Secret Meadow.
Route 131 houses Sky Pillar
Route 132-134 has the big rapid currents maze and Sealed Chamber.
Honestly the sea routes have more POIs than most Pokemon other routes which simply act as a path to connect two cities. And if you really hate exploring the water routes that much, most of them are entirely optional and you can head directly to your next destination.
