He's at work when we see him, and gym leaders canonically use Pokemon at a level that's fair to the challenger. That's why early gym leaders became gym leaders despite seemingly being weaker than the average rando trainer.

He's the only dad with a direct involvement in pokémon. All the rest work as office drones, factory slubs or other employment not directly related to being a roadblock for the Pokémon League's challenge. I think the Sinnoh games are the only ones besides RSE that talk about the dad in greater detail. Palmer says your dad was his rival and describes him as being a skilled trainer. The DPPT dad might still be on his journey, like if Ash was a shitty father.

There is no "canon MC." It varies depending on the medium. Most media used to depict Dawn as the canon MC for Gen 4 and Brendan as the canon MC for Gen 3, but Evolutions has Lucas for Gen IV and May for Gen III.

Girls are never canon though. That's why Dawn and May still showed up in their respective anime seasonns, because Dawn/May the game NPC had a role in the story when not picked as MC, as opposed to Selene or Hilda being absent from their Gen's stories when not the MC, thus not being included in the anime.
