The last Pokemon game I played is Sun in 2016. I don't have a switch, but I want to try Pokemon legends Arceus. How well is the switch emulation go those days? Is that game even good?

Switch emulation is entirely dependent on the hardware you're running it on. If you're looking to make it prettier then you need higher end hardware.
PLA is mechanically very good, the game is quite bare though.

I heard the new combat system doesn't really work from a friend.
Also, can my I7 5820k, RX 580, and 16GB handle switch emulation? I run BOTW with no problems with the WiiU emulator.

Yes it's fine I play it on my Intel UHD 630 at 30 fps capped.

Why not just buy a switch? It's not even that expensive and you probably wanna play scarlet/violet later this year

My i5 8th gen and gtx 1050 runs it very well at 25-30fps, only problem is that yuzu would randomly crash for no reason.
