It absolutely doesn't matter what you think is accurate.
The dry and barren wasteland is a visual stereotype. It's what people (=the whole world, not just Spaniards) imagine when they think of a "Spanish countryside". Red/brownish, dry wasteland. It doesn't matter if it's reality.
Hell, I guarantee you this: the first thing people think of when they hear "Spanish" is fucking Mexico, and latin America. It's the sad truth, but it's the truth. People wouldn't even bat an eye if gen 9 had Aztec pyramids and lush jungles in it.
