Cause the game is open world, these will be scattered around to save the player from having to go back to towns all the time to heal.

Centers will prob still be in the towns and cities.

Wouldn't it make MORE sense to be a building in a townless area as a rest stop for trainer while in a big city it can just be a street cart?

Why does the bottom looks better? I'm not baiting, I see the top having better texture and some better models but bottom just looks much better and I can't understand why (and I didn't even like the trailer, so it's not that).

Speak for yourself. Kalos Pokemon Center was basically a lounge, and Alola had a coffee shop. It was nice to come in and save the game at the end of a day...

Exploring the open world and needing to go through load screens every time to heal your Pokemon might break the pace. I'm guessing that's the reason for the decision, quickly heal your Pokemon without having to endure a scene change.
The town in the first trailer clearly has an indoor one.
