You know, I just realized why I find this gen so boring. It's because barely any of the Pokemon are interesting to find. You just go to route, walk through random encounters, catch the 3 new pokemon there, go to next route, catch the 3 new pokemon there, rinse and repeat for the entire game. There's no neat obscure or secret Pokemon to find like most of the new Pokemon in gen 2, Feebas/Bagon/Snorunt/Regis in gen 3, or Mareanie/Wimpod/Salazzle in gen 7. Even with the legendaries the game doesn't really let you find them by accident and you need to find Cobalion first for the other two to even unlock. It feels very bland even though the game tries so hard to be fresh by replacing all the Pokemon with nu-counterparts.
