As for raw chicken, I wouldn’t say it’s rare, but it’s typically only found on the menu at higher-end restaurants or those specializing in chicken. They can choose where to source their chickens from to more easily ensure they’re safe to prepare. Since those places don’t want to ruin their reputations by potentially poisoning a bunch of people, you can imagine they’re pretty careful.
