The reason people report so many shinies is that the game generates a shitload of pokemon all at once.
But if you aren't listening for the shiny sound, you probably won't find one.
>On that note, do we know if Scarlet/Violet will have OW shinies?I believe Kaka said yes. If it's true the transition into battle is seamless then they would have to be OW shinies anyway.
