Why? Galar is the only region who treats the Pokemon League as a huge, well-known and advertised event instead of a niche sport for trainers

This. All things considered, few champions are well known, much less worshipped.
You have Alder who is known, but doesn't get the hero worship you think he'd get or Diantha who's stuck in a game where her fame could never be properly showcased or realized.
On the other hand people like Steven who's the son of the president and likely heir to one of if not Hoenn's most successful conglomerate or Cynthia who's probably made some sort of contribution to the field of archaeology are unknown despite their strength.
Champions being famous has always been something mostly highlighted in the supplementary material, their status in the games is generally an afterthought.

Literally none of that refutes Pokemon battling as a simple hobby
How many of those Trainers are actively pursuing the League Challenges? Most encounters are normal people going “Hey, you’re a Trainer! Wanna stop and Battle for a few minutes!”
We have Ace Trainer and Pokemon Breeder as special classes for a reason
How often do you see important disputes resolved by battling outside of the protagonist beating up [Evil Team]?
Furthermore, since GF likes to keep each region feeling unique, we most likely won’t see the League treated as a major league competition in SV
Leon will probably be the only massively broadcasted Champion for a while now

I wonder if the line in Japanese is just him calling her a nee-san or onee-san rather than him asking if she's literally your sister. I can accept him not knowing the Champion, his goal is to measure up to his dad. But I would think that he'd know your immediate family. Unless the line is meant to imply you do have an absent older sister that he's never met.

Look at the anime for example: in Cynthia's debut episode, Ash and co. see her battling on TV, so when they meet her in person, they already know who she is and she's surrounded by a crowd.
