Going to need to wait until they add Pedrito to PokeMas for some form of a "canon personality". Although, can't say they really do a good job on those imo.
Also, hopefully the SV leaks were wrong about this, but it seems that SV's character "customization" will be similar to LGPE, where the protagonists only wear reskins of their main outfit. Sorry if I sound cynical, for I was not trying to. As always, I hope for the best when it comes to these cute boys, and the games overall.
