If you can't stand the dated graphics, just play Let's Go! No items, no abilities, just the basics.
Sun and Moon basically have tutorials lasting the entire game, so there's that.

Ruby/Sapphire/Emerald or FireRed/LeafGreen. They're super easy to emulate and you can play them on any PC or Android phone. Gens 4, 5, and 6 are great too if you can get ahold of them. Sun/Moon and Sword/Shield are the same way, but I have my reasons for excluding them.

SM is better. USUM actually filters fresh players with shit like the "harder" Totems and Ultra Necrozma. Along with Ilima and Emily being thrown at you in the very beginning of the game.

Fire Red for sure. Let's Go Pikachu is good for beginners though it's aimed to a younger audience and it's a special take on Pokemon Go rather than the traditional game. Still fun though.

I would say HeartGold/SoulSilver. Solid remake with some seriously good quality of life additions and a fairly straightforward storyline.
I would recommend FireRed and LeafGreen but those suffer from the 90s era RPG progression logic that will stonewall you without a guide. How the fuck are you supposed to know how to find the Warden's teeth?

Emerald and ORAS are also fairly good choices for noobs.
