Proper level scaling only has upsides in an open-world scenario. You can have the traditional experience and also have your own personal flair to how you go through your adventure.
Maybe your team is not well equipped to deal with a certain type, you can just avoid the Gym that uses that type until you have better tools for it.
Or if you think you won't have a better chance later, maybe deal with the Gym while it's still an early, with only a few Pokemon.
