While they know the outcomes of the matches, how they get to that outcomes usually isn't known, more so for top level guys who have more freedom in the ring. For a match between Roman Reigns and Randy Orton, they'll be told who's winning, and how much time they are being given, and then they might plan the match out beforehand, or more or less call it on the fly in the ring. Now, in WWE the refs know how the match is supposed to end, but they are also told to count all pins as if they are going to be a three count and call any that end up counted that way as one even if it wasn't scripted that way. This is so you don't end up with the weird looking spots were a guy is clearly pinned and counted three, but the ref counts 4 and says it was a kick out. They never listened to the crowd to decide who would win, otherwise Cena would have lost so many more matches, same with Roman when he was a face.
