Usually evos are indeed better, if I said something that made it seem like I thought otherwise then I apologize for the misleading phrasing. What I'm talking about is whether Bisharp itself will use Eviolite or not, which I believe it will. It depends on the meta on whether the additional bulk is better than additional immediate power, but I believe for a setup sweeper like Bisharp that the additional bulk to let it setup more consistently may very well be preferred over some additional immediate power, not to mention being able to tank more hits just makes it a Bisharp more flexible overall in a battle.
A scenario you may have experienced yourself if you've played OU enough this gen is Bisharp vs Corviknight, where a phys def Corv switches it in against a Bisharp as it SDs. This is because a phys def Corv can always tank a +2 LO Knock Off and KO back with Body Press.

With an Eviolite however, Bisharp is never OHKOd by BP. That means it has the option to get up to 2 SDs when it couldn't before and potentially break past the Corviknight and sweep. Hopefully this example helps illustrate how the additional bulk can actually end up being very significant for a setup sweeper like Bisharp.
