Why do people say Pokemon isn't grindy when you have to fight wild Pokemon for hours because everyone is several levels above you unless you only use your Starter Pokemon

You aren't supposed to be the same level as opposing Pokemon. Your Pokemon have IVs and EVs while theirs don't. You should also have more Pokemon on your team than them and with better moves.

You don't need to have equal levels to defeat opponents.
And who says Pokemon isn't grindy? Completing the Pokedex takes a lot of time.

Pokemon's difficulty comes from the AI having access to things the player doesn't forcing them to play around it. In the early game, it's moves and evolutions. In the late game, the player has most of these things, so levels are the only way left to disadvantage the player. Your supposed to win despite the level gap. Grinding is a crutch for people who can't beat the game normally.
