For me, it's Clauncher and Clawitzer. Clauncher is inspired by a real animal, the pistol shrimp, which is original enough to be interesting. They amplified well enough the particularity of the animal, its claw, while making it more cartoonish and giving it characteristics (its eyes, its colors) that make it worthwhile as a pokémon. The pokémon itself is clearly a first stage of evolution, quite simple, and cute.

Its evolution is excellent, while remaining logical: it looks more complete, more powerful, its claw is oversized, which makes it differ a little bit more from a real animal, while remaining logical and credible.

In general, I like designs that are biologically coherent, designs you can watch and think "oh yes, I can imagine this pokemon living in the wild, hunting and reproducing".
That's why, for example, I like eeveelutions, which could almost be real animals, except for the fairy type which is clearly over-designed.
That's also why I really don't like objectmons, who doesn't make sense to me.
