I sincerely doubt the idea of Lillie being romantic with Chicken-chan even crossed their minds.
If I had to guess, I think they intended to have the Exeggutor Island scene be romantic first, and then realized that it would be kinda weird for a girl to have a crush on another girl, so they changed the dialogue to more platonic admiration.
