I Iike normal types a lot, there are quite a few cool designs.
A few of my favorites are Snorlax, Kangsakhan, Porygon, Dunsparce, Aipom, Delcatty, Kecleon, and Vigoroth.

It makes sense because by lore pokemon aren't the original holders of their type and they're creatures that generated due to Arceuz' dimension, the giant of normal type. Normal type also isn't no type, it's a "blank type", a neutral type hence it's more like a base to types, with ghost being on the opposite side of the spectrum. Humans are typeless which in-game it's probably the "???" type. So a half normal it's just a pokemon with low concentration of elemental energy
