>>51504551RBY or FRLG if you're not into retro stuff. You can try Red++, or Shin PokeRed I think it's called if you don't mind starting with RomHacks that bring latter generational changes to the original games. Red++ even has a cozy snow based release.
Then you can try GSC/HGSS. If you start with Red++, moving on to Polished Crystal is mechanically seamless
the creators are friends I think, or at least on good terms, and the Red++ dev said they might make the next version IN Polished Crystal. But the trouble with doing this is that the Polished Crystal dev takes many liberties with their version of the game, and it isn't a pure experience by any measure. I think even Red++ has more than the original 151, but I'm not sure. There's bound to be one of those QoL hacks with just the originals though. All of that said, the original GSC is not bad or clunky to play through, but if you absolutely must have a modern experience and don't want to use a RomHack try HGSS after FRLG.
From there you can go on to RSE, and after that, DPPt.
This is basically the order the regions were introduced. Release order is different, and honestly, DPPt is not a sequel to the Hoenn games in the same way the Johto game are a sequel to the original games. If they didn't take place around roughly the same time as the Johto games, one could say DPPt was a sequel to GSC, but that's not really the case even if the story and region are referenced a few times.
