GSC, although I'll admit the nostalgia's mostly talking here. The later gens focus on fancier bells and whistles and that's not really a bad thing, but Tajiri's work to me got the immersion down just right. You're a kid fighting some baddies, catchin 'em all, and visiting several landmarks both in your home region and Kanto with some great 8-bit tunes to go along. The stakes are raised mostly against Rockets and important NPCs like Silver or the leaders; there's no catastrophic gods in sight and unlike modern games you're encouraged to sequence break (to an extent) like RBY which adds to the sense of adventure.
Under modern standards it's a game you might be disappointed in if you focus on powergaming and extra content. New guys aren't handed to you for free and speeding through the credits results in you missing out on some daily stuff, but if you're someone who likes smelling the roses and simple games it's worth checking out. You could almost say it's like the opposite of what came after.
