Zapdos and G-Zapdos share a name and Dex entry because the fact they’re not the same species is unknown in-universe. Diglett and Wiglett are different species/Dex entries because they’re known to be seperate species.

At the end of the day, there is no difference between Rfakes and regional variants other besides the arbitrary lore bits, which is why creating a whole new type of regional variants just with a different name is so annoying, especially when SV already has normal regional variants themselves as well as another type of variants in the form of Paradox Pokémon.

Because what counts as the same species but in different climates and what counts as an entirely different species is completely arbitrary. Galarian Zapdos and normal Zapdos are not just different because of climate, they're entirely different species yet they're treated as merely just a regional variant.

Convergent vs Divergent

Pachirisu and Pikachu are confirmed to be related species. These are not convergent evolutions. They look the same because they all come from a single ancestor that they all got their "chu" traits from.

Yes there is, the Galarian birds are the sole exception and are probably the inspiration for R-Fakes in the first place. All of the other regional forms are either descended from the standard version, or (in the case of Hisuian Pokemon) likely turned into the standard version over time.

Giving Rfakes their own dex numbers and pretending they're new species allows Shit Freak to cut down on their workload even more. From now on, at least half the dex in every new game will be slightly recolored old Pokemon presented as new species.

The Galarian birds are canonically different species that just look like the Kantonian birds. Not divergent but actually convergent evolution. They share the same dex slot because Gamefreak didn't come up with the fake concept before, same reason why Nidorans have different slots.

The Dex entries made it obvious the people only called them these names because of their visual similarities to the birds but it isn't their actual names

These were just GF's poor attempts at trying to make more appealing mascot characters for merchandising and with the hope of creating something that might become just as popular as pikachu, but all attempts to capture lightning in a bottle again have been mediocre or decent at best.
