The only reason why these are better than gamefreak's is because gamefreak nowadays is shit and puts 0 effort.
Similarly, regular AI generated art is superior to low tier artists.
In both instances, the AI art only exists because real artists made countless quality artworks that the AI can take and combine to create new stuff. In this case, the quality artworks are gamefreak's old stuff.
AI can only create art if a talented artist makes quality art in the first place. It also can't create professional artworks as seen in this thread where all fakemons have anatomy/composition/design mistakes which means they would have to later be edited or redrawn from scratch by a real artist.
AI will never replace artists and you will never be an artist.
