The style, the same sort of colors, shapes, design philosophy, and on. You can use the same fundamentals to make an ugly or a cute pokemon, but they'll still have the same sort of 'style'. They'll seem like they're from the same world. SV lacks that consistency, the fundamentals from trainer to trainer or pokemon to pokemon seem to vary, like they were drawn by different people or in a different style. We are aware that since the beginning some pokemon have sometimes been designed by different team members, however they are always touched up and redrawn at some point to try and make them share the overall same style. Ensuring this is done is the job of the art director, who while not necessarily an artist themselves has to keep all the design elements consistent with one another to create a cohesive product. SV has failed to do this so far, which means the art director isn't doing their job. Of note, it is also typically the art director's job to ensure the 3D modelers are doing a good job adapting the 2D art, which as anon said, has been done poorly this time around, with the models sometimes differing significantly from the art.
