They never said that. They said that Geeta is most skilled of all of Paldea's Champions, but Champion is just a rank that anyone can get by passing a test in Paldea, so there's multiple of them, rather than it being a title that only one person can have at a time. "Champion" in Paldea doesn't mean what it means everywhere else.

- If this isn't the end, then making a World Champions where Ash battles and defeats the strongest trainers in the world is an unusually shortsighted decision, especially when they could've just made a Sword/Shield anime if it was going to come down to Ash battling Leon anyway

Leon is the strongest champion from a raw battling perspective, but Paldea is going to be about adventure and treasure hunting. It will require a different skillset and thus is another necessary step to be a "Pokemon master", even if Ash beats Leon and becomes the ultimate battler he still has to learn other skills.

1)Give the Pokemon Festival of Champions manga an anime adaptation. In the so-called "gekijouban"/theatrical release movie format. 5 movies should be enough to cover the existing chapters.
or
2) Make a spinoff anime in the XY ARTSTYLE about Giselle as the MC with Duplica and Ritchie as her companions.
Casey, Sakura, Paul, Alain and Tobias woud make rival/etc. appearances. Aslo Latias, Anabel. Sylveon girl from XY, and Mallow x Lillie (as a yuri couple), Dawn x Cynthia (as a yuri couple)
