This is just one of those ways.
I like Pokemon. I generally find ways to make games more difficult than they would be normally.
I did Set mode, no items and no grinding for several years. SwSh is built in a way where the "no grinding" part is completely undoable, and I didn't enjoy the games as a result.
I don't enjoy multiplayer, and that's true for Pokemon too.
I have no interest in shiny hunting or whatever.
But I still like the core gameplay of Pokemon itself. Nuzlockes give me that extra edge to have fun with it. I don't care about the lore or anything involved in Nuzlockes. It's just an arbitrary ruleset that gives me more enjoyment out of the games.
